Super Cookies

We call these Super Cookies! Full of goodness, wholesome ingredients and taste delicious. And super quick to make.
  • 1 cup oats
  • 2/3 cup spelt flour
  • 1/2 cup maple syrup or honey
  • 1/3 cup flax meal
  • 1/4 cup sultanas, chopped dates or gojis
  • 3 tbs peanut butter or tahini or combination
  • 2 tbs desiccated coconut
  • 2 tbs coconut oil
  • 1/2 tsp bi carb
  • 1/2 tsp cinnamon
  • pinch salt
  • 3 tbs choc chips or cacao nibs (optional)

    1. Preheat oven to 180C
    2. Throw everything except the choc chips/nibs in a food processor until combined and almost like a dough.
    3. Pulse in chips/nibs.
    4. Scoop into balls and flatten on a baking lined sheet.
    5. Bake for 13 minutes.
    6. Allow to cool on tray (preferably in a hidden location!)
    7. Store in an airtight container - if you think they'll last more than a few days place in fridge.
