I don't cook with sugar often but when I do I use coconut sugar.
Coconut Sugar is evaporated nectar from the coconut palm tree blossom. It has the added bonus of not being bleached and stripped of nutrients like other commercially available sweeteners. It can be used in the same ratio as other sugars you may use.
Coconut Sugar is like raw or brown sugar only better! It is naturally low GI, slightly caramel flavoured but not too sweet. When compared to brown sugar, it has twice the iron, four times the magnesium and over 10 times the amount of zinc.
The coconut sugar palm is know as the 'Tree of Life' in traditional communities and has a reputation of being the most sustainable sweetener in the world.
