Chocolate Milk Powder

My girls love a nice cool drink of choccy milk occasionally so I had to come up with a healthy 'milo' recipe that tasted good! The best thing about it is there are no refined sugars and it is dairy free.

Peanut Butter Cookies


If you are feeling like a bit of a treat and need a protein hit try these! These super easy Peanut Butter Cookies are delicious!


Ingredients:
  • 1 cup Power Super Foods coconut sugar
  • 2/3 cup peanut butter
  • 1/3 cup tahini
  • 1 egg
  • optional 2 tbs choc chips or cacao nibs

Method:

Preheat oven to 180°C and line a baking tray with baking paper.

Combine all ingredients and with slightly wet hands roll into balls and press with the back of a fork.

Bake for 7-9 minutes.

Serve with a chocolate milk or Chocolate Chiller

Coconut Sugar

I don't cook with sugar often but when I do I use coconut sugar.
 
Coconut Sugar is evaporated nectar from the coconut palm tree blossom. It has the added bonus of not being bleached and stripped of nutrients like other commercially available sweeteners. It can be used in the same ratio as other sugars you may use.
 
Coconut Sugar is like raw or brown sugar only better! It is naturally low GI, slightly caramel flavoured but not too sweet. When compared to brown sugar, it has twice the iron, four times the magnesium and over 10 times the amount of zinc.

Tropical Green Smoothie

So glad to see strawberries coming back into season! And speaking of seasons winter is here - this is an excellent green smoothie for warding off colds - pineapple, kiwi fruit and strawberries are all excellent sources of vitamin C.

Here's what I whipped up today:

Ingredients:
  • 250mL coconut water
  • handful baby spinach
  • 1/2 kiwi fruit
  • 1/4 banana
  • 2 strawberries
  • chunk of pineapple
  • coconut cream ice cube
  • 1 tbs chia seeds
